Get this book for that above mentioned receipe. Worth 5 stars for that alone. Everything else is absolutely fantastic, but the chicken...WOW! I would pay twice the price for that receipe alone.

Pleased with service & quality of book
I ordered this book for my sister who doesn't have a computer. She was thrilled that I found this cookbook for her "used" at such a reasonable price; she had enjoyed some of the recipes as a guest at a friend's house and wanted to own the cookbook. The quality of the book was better than expected and Amazon provided excellent service.

Excellent but imperfect
If you look at my other reviews of Prudhomme's cookbooks, you won't be surprised that I bought this one. Unfortunately, the quality of testing has slipped, so that not all recipes work just the way he says. I say this at the start, because in 95% of cases, these recipes are wonderful.
