Great find!
I am so happy to have found this book. I have been making the quick breads for my boys (one of which is allergic to peanuts, wheat, soy, egg, and milk). I have been making the breads into mini muffins to take the place of snack crackers, etc. THey love them. I also used the zuccini brownies for their (twin boys) birthday cake. It was great. I love this book! I usually get a cookbook, make a few recipes, and set it aside, never to be used again. But The Uncheese Cookbook is different.
