Very good book!

This is a very good book.It is one of the very few books that clearly shows how to braid bread using numbers to identify each rope of dough.Also the sourdough starter instructions are pretty clear and attainable.Great book!


Bread baking class - in a book!

I had virtually no bread baking experience before I purchased this book. I was not looking for a book of recipes, but one to help me understand the process - so that I could explore and that is what this book does. After a quick read-through of the overview chapters. I made breads from each of the sections. Each one has turned out beautifully! I was not really expecting that. But by my third bread I was feeling pretty confident... but I was ill while I was making my fourth. I did practically everything "wrong". Since I had read the chapters on techniques though, I did not panic. And even though I added the salt too late, let the rise go too long, and forgot to lower the oven heat until much later than I was supposed. The bread came out delicious!! Rose, thank you so much for this class on bread-baking in a book!

One loaf per recipe? Get serious!

I bought this book primarily on the strength of Berenbaum's other books. I have always found her recipes superb, and the "understanding" sections very helpful. I am an experienced bread baker, and have a fully equipped kitchen, so special requirements are no problem. However, I found this book a disappointment for two reasons. First, who ever heard of baking just one loaf of bread? Almost all her recipes are for ridiculously small quantities. After going through a lot of trouble, you want something to show for your efforts. It would have helped if she had given instructions for larger quantities, since often the leavening does not have to be doubled. I could not find any mention of this anywhere. Second, although her book is instructional, the degree of detail is tedious. She did a much better job in her Cake Bible, giving enough information to be useful, but not so much that reading the recipe was a chore. There are other bread books out there, just as technical, and that have equally good recipes, but are not such a chore to wade through. Someone missed the boat on this one.

this book is the best cookbook ihave in my entire collectio, I have alot Because iam sous Chef ina fine dining restaurant. Every bread comes out fantastic and the instructions are very easy to follow.


The bread baker's book

This is really for advanced bakers. This book was written for people who have baked bread & are SERIOUS about baking. If you've ever wondered why your bread didn't come out as you hoped, this book will have the answers. If all you want is a book with recipes for different breads, you should choose another.
