Well worth the upgrade and revisit

I received my first "Joy" when I married in 1974 (no pun intended) and for many years I used it religiously. As I gained more confidence (and interests) as a cook, I wandered away, using Joy only when I was faced with an ingredient with which I was unfamiliar or wanted to use an old favorite recipe (the rice and pistachio stuffing recommended for Cornish game hens is to die for).

All in all, I reckon my copy simply drew dust for the past ten years or so.

However, a few weeks ago I needed to find something basic so I gave my new Joy a road test of sorts and left bedazzled. Gone was the pedantic, succinct-to-the-point-of-incomprehensibility instructions and the omniscient narrator who lacked personality. Now the recipes bloomed with incidental information as well as the instructions, and the recipes go well beyond the American canon. I feel like I know Ethan Becker as well as I feel I know the late Julia Child, so much has changed in style.

As for the basics, here Joy once again takes first place in any contest to explain the basics. I like to freeze fresh fruits and vegetables, for example, and thought I'd been doing a pretty good job over the years, but with the new information I obtained I've already noticed an improvement in my results.

Thank you, Mr. Becker, for carrying on for your grandmother and mother. You've done them proud. I was also very happy to see that I will still know how to prepare a bear should one be brought to me for cooking.

The best cookbook for beginners

This cookbook is the best for beginners. Easy to understand, complete, and teaches a lot about cooking for everybody. I am really enjoying this book!

Liked the previous edition better

I have both editions, this new Joy of Cooking and the 1975 edition, which I like better. The modern version is tailored to suit today's eating and cooking habits, but that isn't necessarily a good thing. Some of the ingredients call for pre-prepared, canned foods, which is fine, but I'm not sure it belongs in this cookbook. However, the informal, easy-to-read style, comprehensive information, and extensive recipe collection make up for any of its faults.

Only cookbook I use

I pull this cookbook out EVERY TIME I cook! I don't know how I would have gotten through my first year on my own without it! I has all sorts of instructions and recipes for almost everything I want to cook and even recipes I probably won't ever cook. I, of course, change things to taste and refer to my mother, but this book always provides a great outline. This will stay on my shelf for many years to come!!
