This cookbook is my friend
My boyfriend's mom lent me her older addition of this cookbook and I have been very pleased with it ever since. I try to cook using ingredients I already have (especially the produce), and the variety of
recipes
the Goldbecks provide has not let me down so far. The instructions are written in a way that's easy to understand and everything seems possible. The recipes are nutritious and filling; I especially appreciate the noted protein content tacked on the end of each entree. My favorite recipe so far has been the "baked vegetable omlette," which made nice work of our summer CSA (community supported agriculture) rations.

Excellent cookbook!
This book is so thorough and well explained. I have to admit I wasn't expecting much
from
the simplicity of the
recipes
but when I tried a few I was WOWed! No weird exotic ingredients here that I've never heard of and nothing in the book that I cannot get a hold of in local markets, even tho I live in the middle of nowheres-ville. Techniques are so well explained I don't feel like I need another book to add to explanations. The section on bread making is wonderful! I just started learning how to make bread and this book has been exceptional in aiding my endevour.
I love all the recipes for the different loaves, burgers, and other
meatless items
you can easily make in your own kitchen that hold their shape well. It's not presented as meat substitutes, but rather, other meals you can eat in those familiar shapes.
Excellent cookbook, if you're going to have only one vegetarian cookbook in your house, it can definitely be THIS ONE. It's a keeper!!
Vegans be aware: there is liberal usage of eggs & cheese so you may want to keep looking if you desire an all-vegan book. Carnivores, if you want to cut down on your meat consumption, I highly recommend this book.
One other comment on a disappointing note: Watch out for the One Pot Macaroni and Cheese recipe... I think the measurements are wrong, because I tried to make it, I think there's no way you can put UNcooked macaroni in the oven with so little liquid. The authors did personally respond to my inquiry, so I'm thoroughly impressed with that, but I still cannot figure out how to make that dish with the measurements given in the book.

Kudos for Overall Excellence in Vegetarianism
I am NOT exclusively vegetarian but, I do on occasion love a good vegetarian meal. After being disappointed so many times by various books on the subject, I checked this book out through my library system. After giving it a test run I NEEDED it in my personal library.
This one is definitely a winner and a keeper! It has a wonderful selection of
recipes
from hometown
to around the world; uses easy to find ingredients and has very informative sections on menu planning and preparation techniques.
Great for folks who want to explore this type of
cuisine
at either an entry or expert level because the authors really made an effort to make the cuisine accessible and palatable for a variety of tastes.

All Around Incredible Cookbook
First of all, I am not vegetarian or vegan. In fact, I am just tired of dieting and want to be healthy. Before I bought this book, I checked it out of our library, after reading the first few sections I knew this was a book I wanted in my kitchen. I was greatly impressed that it wasn't biased against meat-eaters. The consise layout is amazing. There are 1,300
recipes along
with a lot of cooking and kitchen help. It has great consise nutritional information as well.
My only problem is that it still uses a lot of soy based products, and dairy. These I can work around. It is still worth having in my kitchen full-time!

, and is the most comprehensive vegetarian cookbook I've ever seen.
No, it doesn't have glossy photographs of food that you will never get to look like the picture. And it certainly doesn't have one of my biggest pet peeves about vegetarian cookbooks: exotic and hard to find ingredients. What is does have is recipes that are made of wholesome, easy to find ingredients, with simple to follow directions for preparation.
The recipe section is divided into helpful sections, with my favorite being "
Short-
Order
Cooking". This section is packed with quick delicious recipes that can take mere minutes to bring
from
the kitchen to the table. For me, this is worth the whole book! In each section as well, within different food types, there is a short description of each with helpful cooking tips. This is very helpful if you've never made a crepe before, for example.
Aside from the voluminous recipes, there is loads of other information in this book. There are sections on wholefoods philosophy and nutrition, and at the end there is a section called "The Food Reader", which goes into extensive detail about how to create a well stocked pantry, how to handle and store food, tips on cooking, kitchen math, and tips for eating out.
Like I said, this book is several other books packed into one. It is a cookbook, whole food nutrition guide, cooking instruction manual, and general vegetarian lifestyle guide. No wonder it took the Goldbeck's five years and endless hours of testing recipes to write this book! -Katy Farber
