Interesting not only as a cookbook

but also as a snapshot of a place and time that is gone forever. Since the book is a re-print of recipes collected to raise funds for charity, the quality of the recipes varies and is in proportion to the skill of the contributor. The same can be said of the instructions. This type of variation (from excellent to incomprehensible) is common in this type of cookbook. There are essays on various semi-related topics, also of varying quality.

What is absolutely useless and unforgiveable is the index. Of what possible use to anyone is an index listing the recipes in the order in which they appear? There is no cross referencing, no category listings, no order or logic whatsover. Just arbitrary chapter headings (such as "Proteins" and then a list of recipes in order of appearance. Another strange category is "Happy Moments" with everything from Duck to Tempura to an essay on the presentation of food on european transatlantic voyages.

As a collection of genuine examples of Cuban cuisine from pre-Castro Cuba it is excellent, many recipes cannot be found in other books (I know, I've tried). The problem is that, with this completely incoherent index, they are very difficult to find in this book as well. Cookbook publishers have to remember that cookbooks are not novels, they are reference books. That is why I've given it only 3 stars.
